A 'Ghost-like' tool that backs up individual folders and files?

Ghost has the unfortunate limitation of forcing you to mirror entire
partitions or drives. Is there any software tool that allows one to
hotswap in a burner or usb drive and rip individual files and folders
straight off the hard drive onto your media of choice?

You mean software that supports the filesystem so you can
access the partition, loads drivers for these devices so
they're accessible and can be copied to using a familiar
GUI?

Right click, copy paste.

Without more info (fi, do you need incrimental or differential
backups, compression, encryption, automation... ?) that's the best I
can suggest.

It's a software question too.

Try SyncBack
